Because summer and sushi go hand in hand, now’s the perfect time to learn how to make your own delicious handrolls! Inspired by our friends at Temakira, below you’ll find a seriously tasty recipe for spicy tuna handrolls that your friends and family will love. (This recipe will yield 12 servings).

Ingredients:

For Sushi Rice

  • 1 1/3 cups water
  • 1 teaspoon Kosher salt
  • 1 1/2 cup short grain rice
  • 1 tablespoon rice wine vinegar

For Spicy Tuna Filling

  • 8 ounces of raw tuna
  • 1 teaspoon sambal or chili-garlic sauce
  • 1 teaspoon sriracha
  • 1 1/2 teaspoon fresh ginger, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons coconut amino acids (optional)

For Handrolls

  • 6 sheets of nori seaweed, cut in half
  • Black sesame seeds
  • Avocado
  • Cucumber
  • Cilantro
  • Shikoki mushrooms (optional)

 Preparation (Sushi Rice)

  1. In a small pot, add water and salt before adding rice 
  2. Boil for 1 minute and add a lid to your pot 
  3. Turn heat to low and steam for 15–17 minutes (until all liquid has been cooked off)
  4. Add rice wine vinegar and fluff with a fork 
  5. Return lid back to your pot and boil for an additional 3 minutes

Preparation (Spicy Tuna)

  1. On a cutting board, cut your tuna into bite-sized pieces
  2. Taking a large knife, mince the tuna
  3.  In a medium-sized bowl, combine the sambal, sriracha, ginger, sesame oil, rice wine vinegar, and coconut amino acids
  4. Add the tuna to your sauce and gently combine
  5. Set aside to marinate

Assembly

  1. Place a half sheet of nori on a flat surface
  2. Trim 2 inches off of the end of the sheet with a knife or scissors 
  3. Place 1 tablespoon of rice on one end of the nori 
  4. With wet fingertips, flatten the rice
  5. Add 1 tablespoon of the spicy tuna mixture to the top of the rice and sprinkle the tuna with sesame seeds
  6. Add avocado, mushrooms, cucumber and cilantro to the top of the tuna. 
  7. Roll the nori into a cone shape
  8.  Use a few drops of water to rub the edge of the nori so that the cone seals itself shut
  9. Serve immediately
