Summer is almost here and we’re missing sunny Sunday mornings spent at brunch. Though you may not be able to visit your favorite local spot right now, our friends at Whole Foods 365 have a variety of recipes you can try at home.

Mango Mimosas – A summer twist on your favorite brunch cocktail

Ingredients: 

  • 1 small  mango, diced (about 1 cup) 
  • 1 (750.0-ml) bottle  of chilled Prosecco 

Directions: 

  1. Place mango in a food processor and process until very smooth, stopping frequently to scrape down the sides of the bowl 
  2. Transfer the mango puree to another container 
  3. Spoon about 1 ½ tablespoons of your puree into 6 glasses and carefully pour in Prosecco; drinks will foam 
  4. Allow foam to settle, then stir each drink once or twice to combine the Prosecco and puree 
  5. Serve immediately

Classic French Toast – A sweet + simple brunch classic

Ingredients:

  • 6  cage-free eggs 
  • 3/4 cup  milk 
  • 3/4 cup  heavy cream 
  • 1 teaspoon  pure vanilla extract 
  • 1/4 teaspoon  ground cinnamon 
  • 2 tablespoon s unsalted butter, divided 
  • 8 slices  brioche or challah bread 
  • 1/4 teaspoon  fine sea salt 
  • Maple syrup, optional 
  • Blackberries, raspberries, blueberries or strawberries, for serving, optional 
  • 1/4 teaspoon  fine sea salt 

Directions:

  1. Preheat oven to 200°F. 
  2. In a shallow bowl, whisk together eggs, milk, cream, vanilla, cinnamon and salt. 
  3. Heat 1 tablespoon butter in a large skillet over medium heat. 
  4. Working with 4 or 5 slices at a time, dip brioche in egg mixture, turning to coat thoroughly, then gently shake free of any excess. 
  5. Arrange brioche in skillet in a single layer and cook, flipping once, until deep golden brown and cooked through, 2 to 3 minutes per side. 
  6. Transfer to a large baking sheet when done and keep warm in the oven. 
  7. Repeat with remaining butter, brioche and egg mixture. 
  8. Transfer French toast to plates, top with syrup and berries, and serve.
