English Muffin Pizzas

For a quick afternoon snack reminiscent of a classic kid favorite (pizza bagels) 

Ingredients: 
– 4 English muffins, split 
– ½ cup pizza sauce 
– 2 cups shredded mozzarella cheese  
– 16 slices of pepperoni (if desired

Directions:  
Step 1: Preheat the oven to 375 degrees Fahrenheit  
Step 2: Place the English muffin halves onto a baking sheet. Spoon the desired amount of pizza sauce onto each half 
Step 3: Top each English muffin with the cheese and pepperoni 
Step 4: Once the oven is ready, bake for 10 minutes until your cheese is melted and brown on the edges.

Veggie Pizza with Cauliflower Crust

This pizza is perfect for the vegetarian or gluten-sensitive person in your life!  (Bonus: It’s an easy way to sneak vegetables into your child’s diet.) 

Crust Ingredients: 
– 5 cups of chopped cauliflower (equivalent to one small head) 
– 1 cup of shredded Asiago cheese  
– 1 large egg 1 clove of garlic (minced) 
– Kosher salt  
– Black pepper 
– Olive oil 
– 1/2 teaspoon of dried Italian seasoning (optional) 

Directions: 
Step 1: Preheat your oven and a baking sheet to 475 degrees Fahrenheit  
Step 2: Add the cauliflower to a food processor and pulse until finely ground. This recipe should leave you with about 4 cups. 
Step 3: Transfer the cauliflower to a large bowl. Add the Asiago cheese, egg, Italian seasoning, if using, garlic, salt and black pepper. Combine until the mixture holds together when pinched. Pour onto a clean kitchen towel and wring out as much moisture as possible. 
Step 4: Line a cookie sheet with parchment and brush with oil. Spread the cauliflower mixture into a 12-inch circle. Slide the parchment onto the preheated baking sheet and bake until barely golden and darker at the edges, about 15 minutes. 
Step 5: Remove the crust from the oven. Place desired amount of pizza sauce and toppings.  
Step 6: Place pizza back on baking sheet and bake until bubbly (about 4 minutes).

– Green peppers 
– Black olives 
– Basil
